Below are 4 millet-based snack recipes — quick to make, nutritious, and totally lunchbox-approved!
Mini Millet Vegetable Cutlets
Serves: 3–4 kids (8–10 mini cutlets)
- ½ cup finger millet flour (ragi)
- 1 boiled potato, mashed
- ½ cup finely chopped vegetables (carrot, beans, peas)
- ½ tsp ginger-garlic paste
- ¼ tsp cumin powder
- Salt to taste
- Bread crumbs or crushed oats (for coating)
- Oil for shallow frying
- Mix all ingredients (except oil and crumbs) into a soft dough.
- Shape into small patties and roll in bread crumbs.
- Shallow fry until crisp on both sides. Serve with chutney or ketchup.
Millet Boondi Bhel
Serves: 2–3 tiffins
- ½ cup sorghum flour
- Pinch of salt
- Water (to make flowing batter)
- Oil for deep frying
- Chopped onion, tomato, coriander (for bhel)
- Lemon juice, chaat masala
- Make a smooth batter using flour, salt, and water.
- Drop through a perforated spoon into hot oil to make boondi. Drain on paper towels.
- Mix boondi with onion, tomato, coriander, lemon juice, and chaat masala for a crunchy bhel.
Little Millet Sweet Balls (Laddus)
Makes: 10–12 laddus
- 1 cup little millet flour (roasted)
- ½ cup powdered jaggery
- 2 tbsp ghee
- Chopped nuts (cashew, almond – optional)
- Heat ghee in a pan and roast flour until aromatic.
- Add jaggery and mix well on low heat.
- Turn off heat. Add nuts and shape into small laddus while warm.
- Pack in foil or paper cups for tiffins.
Baked Millet Crackers
Makes: 15–20 crackers
- ½ cup multi millet flour (any mix: jowar, bajra, foxtail)
- ¼ cup whole wheat flour
- 1 tsp sesame seeds
- 1 tbsp cold ghee or butter
- Salt to taste
- Water to knead
- Mix all ingredients and knead into a stiff dough.
- Roll out thin and cut into shapes.
- Bake at 170°C for 12–15 minutes until crisp.
- Cool completely and pack in airtight boxes.
